Summer Truffle Omelette

A simple dish for 3.

Ingredients:

-6 eggs

-40gr of butter

-30gr of black summer truffle

-Crack 6 eggs in a bowl.

-Add the 30 grams jar of summer truffle with a pinch of salt.

-Stir the mixture lightly, just enough to break the eggs.

-Preheat a frying pan on medium heat, put 50 grams of butter in the heated pan, add mixture when it starts sizzling.

-After a couple of minutes, with a spatula, bring the side of the mixture to the centre of the pan.

-When the omelette it's hard enough, flip it using a plate and finish cooking on the other side.

-Serve with a piece of buttered bread.
